A brief story of the Scotland's original Hakata-Tonkotsu Ramen.
Back in 2003, Chef Tang tasted authentic Hakata-Tonkotsu Ramen for the first time in Hakata, Fukuoka, Japan.
He immediately fell in love in rich but complicated flavour of Tonkotsu soup which he has never tasted before. He could not forget about the taste for years...
After he left a head chef position at London's leading Japanese restaurant, he went to Fukuoka and Yokohama to learn how to prepare authentic Ramen in 2005 with his Japanese wife from Fukuoka.
Chef Tang and Yoshi are in Scotland, preparing Ramen stock with care everyday just like our Japanese Ramen Masters.
