Chef Tang started cooking when he was 6 years old to feed hungry little brother.
He worked Japanese restaurants include, Shangri-La Hotel in Dalian, Eiroku-kaku in Bank/London, Operation head chef at Yo!sushi, Le orient in St.Andrews and more.
Back in 2003, Chef Tang tasted authentic Hakata-Tonkotsu Ramen for the first time in Hakata, Fukuoka.
He immediately fell in love in rich but complicated flavour of Tonkotsu soup which he has never tasted before. He could not forget about the taste for years...
After he left a head position, he went to Fukuoka and Yokohama to learn the authentic Ramen preparation with his Japanese wife from Fukuoka.
He opened his first restaurant in Edinburgh in 2007, still serving Ramen with care and love everyday just like his Japanese Ramen Masters do in Japan.
